Our Oil
The production of extra virgin olive oil is a fundamental part of our cultivation, cared for with the same passion that we reserve for our wines. Obtained from olive trees, even centuries old, of Nocellara Etnea, a native cultivar of eastern Sicily, our oil stands out for its purity, intense green, delicate aroma and a freshness that make it unique.
The Olive Grove
Our olive grove is located in the Contrada Valcorrente Estate, and the harvest takes place when the olives are still green and full of aromas. Furthermore, the milling takes place within a few hours, to guarantee freshness and keep their organoleptic properties intact.

- About 280 m above sea level - Plants from 2 to over 100 years old
- Manual harvest starting from October
- Extraction plant: continuous cold cycle below 27 °C; the olives are milled immediately after being harvested, to preserve the organoleptic qualities.
- Storage: Dark, dry, at a constant and controlled temperature (15 - 18 °C) in stainless steel silos, in the complete absence of oxygen, with a nitrogen system.
- Decanting: Natural, in a tank with racking.
